Our Commitment to Teaching Nutrition

A whole-person approach to nutrition education


At KCU, the osteopathic whole‑person philosophy emphasizes preventive care, supporting the body’s structure and function and understanding how lifestyle factors influence overall health. Students develop the skills needed to become compassionate, community‑focused physicians who understand how preventive, evidence‑based care can advance patient well‑being.

This foundation aligns with growing national interest in nutrition education, as research shows that medical students across the United States want more training in this area—especially as its role in inflammation, chronic disease and long‑term health continues to expand.

Beginning in the 2026–2027 academic year, students will complete nutrition competencies throughout the curriculum such as:

  • Understanding the functions of essential nutrients
  • Recognizing how structural components from food directly support human nutrition
  • Identifying how dietary amino acids, essential fatty acids and cholesterol contribute to building proteins, membranes and hormones
  • Integrating evidence‑based nutrition information into patient care and clinical decision‑making
